In this Micro-Flight, Bonez and Alex go head-to-head once again with the Yukinobijin JG Ginnosei & Omachi rice varieties!

Yukinobijin from the legendary Next 5 of Akita have brought the fight to us! Keeping all factors the same (even yeast type, the famed Aramasa #6 Yeast!) in order to express all the qualities of Ginnosei and Omachi sake rice!

On Team Bonez we have Omachi, an ancestral heirloom strain of rice known for its rich, deep, earthy, mildly aromatic and robust expressiveness!

On Team Alex we have Ginnosei, a prized strain of Akita known for its light, ginjo, protein and mineral rich style of expressiveness!

We support small breweries and small-batch brewing, from Muroka Nama Genshu (unfiltered by charcoal, unpasteurized, undiluted) styles, to traditional Yamahai and Kimoto styles, to ancient styles like Doburoku and Bodaimoto, and Koshu (Aged) sakes. To support a craft sake list like this, our food pairings have to be considered at a different level as well. Hence, in planning our food menu, OMU NOMU creates dishes that encompass robust flavours whilst paying homage to traditional techniques, from binchotan-grilled kushiyaki to sashimi to even filling overloaded maki that pair extremely well with our sake.
